Roast Goose With Mustard Sauce at the Schenectady, N.Y. Daily Gazette is the most interesting of the recipes from "Giving Thanks: Thanksgiving Recipes and History from Pilgrims to Pumpkin Pie," by Kathleen Curtin, Sandra L. Oliver and Plimoth Plantation.

And it reminds me of a recipe from Esquire, Timothy Leary's Goose with Prune, Apple, and Chestnut Stuffing that you had better start now. It begins, "The stuffing: Marinate a box of pitted prunes in a jar of port for a week, then roll them in grated lemon rind..."
