Vegetarian Easter recipes, corn bread and more lamb

I'm still undecided, still foraging. Leaning strongly toward White Bean and Ham Hock Soup with Arugula and Corn Bread Croutons with corn bread instead of croutons.

cornbread.jpgI've narrowed down the corn bread choices to those without sugar -- I don't want cake with this soup: Gristmill Corn Bread from the Atlanta Journal-Constitution, Cornbread with No Wheat Flour, from Meg Fortino in the Usenet newsgroup rec.food.recipes, Delicious Southern Cornbread at AllRecipes or less likely, Blue Cornmeal Bread from Epicurious.
