2011 4th of July barbecue recipes from newspaper food sections

The most interesting grill food I've seen in this survey of the nation's Food sections comes from the San Francisco Chronicle via the Minneapolis Star-Tribune: Halibut With Grilled Lemons, Tomatoes and Olives; Grilled Eggplant Salad With Garlic-Miso Vinaigrette; Grilled Chicken Poblano Tortas; Chorizo and Date Skewers With Orange-Cinnamon Couscous; Grilled Rib-Eye Steaks With Charred Scallion Butter. They're all at Recipes: Make the most of your grill.

Actually at the Chronicle now, Chill and grill fish for a fab Fourth of July includes Grilled Salmon With Lemon-Herb Yogurt, Grilled Grouper With Orange Supremes & Orange-Caper Aioli, Grilled Tuna Banh Mi, Grilled Mahi Mahi With Gazpacho Vinaigrette. The Chron's Barbecue and Grilling section is a wealth of tips and recipes.

Simple and healthy Grilled Chicken And Vegetables comes from the Hartford Courant. Grilled Chicken with Mustard, Black Pepper and Shallot Marinade kicks the flavor up. It's from Lawrence, Ks. TV Ch. 6. From another angle, Tequila-Marinated Chicken Thighs from the Ottawa Citizen may kick the party way up. Chicken Thighs With Easy Sweet 'N' Sticky Barbecue Sauce, from the Detroit Free Press and pictured a the very top of this entry, leaves on the flavorful skin. Let guests decide if the holiday is a time to diet or splurge.

Brown sugar grilled turkey breast at the Baltimore Sun may appeal to those who prefer slices and a fork.

Grilled Asian Copper River Salmon (soy sauce, garlic, ginger, mustard ) at the Nashua, N.H., Telegraph should please your salmon fans.

From AP, The 20 Burgers of Summer: Celebrity chefs offer their best burger recipes.

spribs.jpgStephanie Parker at the Birmingham (Ala.) News writes, "These were hands down the best ribs we've ever made... All you have to do is put the dry rub on the ribs, wrap them up in foil, bake them in the oven for 3 hours and then finish them off on the grill with some BBQ sauce." They're pictured at right, and here's the recipe: Fall Off The Bone Ribs.

The Denver Post's Honey Ginger Glazed Pork Tenderloin may be just the thing for two, or quintuple it for a crowd. Its glaze is simple -- garlic and ginger, oil, salt and pepper in addition to the title ingredients.

Denver also shares a nice-sounding recipe from the Detroit Free Press for Porcini Mushroom Burgers.

Burgers, steak, chicken: The staple of summer grilling at the Belleville News-Democrat covers the basics: Grilled Chicken Breast 3 Ways (Seasoned with Sun-Dried Tomato and Basil, Garlic-Herb or Sage Butter), Grilled Marinated Steak Skewers, Hawaii 5-0 Burger with Garlic Aioli. For sides, Oven-baked Fries, Creamy Dill Potato Salad, Vegetables with Walnut Dressing, and Pasta Salad with Tomatoes & Corn.

lamb-grill-teaser.jpgFired up: Get grilling for Fourth of July at the Toledo Blade draws inspiration from global fire-cooking: "Onion Water" Lamb Chops, Moroccan-Spiced Chicken, Marinated Chicken Thighs with Mint-Tahini Sauce, Terrorized Steak -- and Grilled Chocolate Sandwiches. Many are pictured at right.

Moroccan 'Sliders' in the Portland Oregonian sound really good: grilled crusty beef and/or lamb patties mixed with chopped onion, parsley, cumin, salt and pepper. Steven Raichlen of "Planet Barbecue" serves them with Onion Relish, but I'll be taking the lemon-juice option, not the suggested sumac powder.

Salads:
Quick & Healthy Potato Salad uses yogurt, red onion, dill pickles, celery, mustard and red potatoes. It is simpler and less exotic than the global choices in Kathleen Purvis's A world tour of potato salad at the Charlotte Observer. Gauge your guests and pick one.

bb&corn.jpgReaders share their variations on bean salad is a trove of alternatives to creamy potato salad. There are 14 of them, with names such as Black bean and corn salad, Balsamic black bean salad, Veggie-bean potluck salad, Marinated beans, Three-bean salad, Marinated bean and pea salad, Black bean salad, Pea and bean salad, My beany Caesar salad, Bean salsa, and several just named Bean salad. I've saved them all.

Desserts:
mjs-grilldessert.jpgGrilled desserts can be more than s'mores at the Milwaukee Journal-Sentinel: Smokey Crème Brûlée, Dutch Oven Cherry Clafouti, Grilled Pineapple Rings with Sugar, Cinnamon and Coconut (at left).

Grilling dessert brings out the flavor of summer at the Dover (Del.) Post offers a country-club chef's recipes for
Summer Strawberries with Grilled Pound Cake, and Grilled Angel Food Cake with Pepper Berries and Ice Cream. Both sound good, and both start with cake that can surely be store-bought.

iccake.jpgEven better, Skip oven, and make your own ice cream cake from AP is cakeless. It's layers of ice cream with caramel and fudge and cherries on top, pictured at left. Yum.

Patriotic_Pie_200.jpgSeeing red, white and blue desserts for 4th of July is a clueful headline: The primary appeal of this "Easy Patriotic Pie" -- at least to my family of gelatin-scorners -- would be visual. But it sure is pretty, and the Belleville (Ill.) News-Democrat found this Kraft recipe and a few more that would make festive centerpieces: Old Glory Cheesecake Stars, and Red, White and Blue Ice Cream Cupcakes.
